Gordon Ramsay 24 Hour Burger

Gordon Ramsay’s 24-Hour Burger trades the patty for slow-braised beef short rib in a red-eye (coffee) BBQ sauce, topped with white cheddar, bacon, and arugula. It is the low-and-slow entry among his signature burgers, and the recipe below builds the sauce.

24-Hour Burger FAQs

The questions that come up most: why it is called the 24-Hour Burger, what red-eye BBQ sauce is, cut swaps, and cooking it in a slow cooker.

Why is it called the 24-Hour Burger?

The short rib is braised low and slow (often started a day ahead) until it is fork-tender, which is what gives the burger its rich, fall-apart texture.

What is red-eye BBQ sauce?

A barbecue sauce spiked with strong brewed coffee or espresso, which adds a deep, slightly bitter roast note that stands up to the beefy short rib.

Can you use a different cut?

Chuck roast braises to a similar tender texture and is a good, cheaper stand-in for the short rib.

Can you make the short rib in a slow cooker?

Yes. Braise it on low for 7 to 8 hours until fork-tender, then glaze with the red-eye BBQ sauce before building the burger.
