Ingredients
  

  • 2 lbs Boneless Beef Short Ribs
  • 4 Hamburger Buns
  • 4 slices White Cheddar Cheese
  • 8 strips Bacon
  • 2 tbsp. Brown Sugar
  • 2 cups Arugula
  • Salt, Pepper To taste, and Other Spices (e.g., garlic powder, onion powder)
  • Oil For searing

For the Red Eye BBQ Sauce

  • 1 cup Your Favorite BBQ Sauce
  • 1/4 cup Strong Brewed Coffee or Espresso

For the Cold Brew Vinaigrette

  • 1/4 cup Cold Brew Coffee
  • 1/2 cup Olive Oil
  • 2 tbsp. Balsamic Vinegar
  • 1 tsp. Honey
  • 1 tsp. Dijon Mustard
  • Salt and Pepper To taste

For the Pickled Shallots

  • 2 Shallots, thinly sliced
  • 1 cup Vinegar (like apple cider or white wine vinegar)
  • 1/4 cup Sugar
  • 1 tbsp. Salt

Instructions
 

Braise Short Ribs (Day Before):

  • Season the short ribs with salt, Pepper, and spices.
  • In a large pot, heat oil over high heat. Sear the short ribs on all sides until browned.
  • Cover with beef stock and bring to a simmer. Cook on low heat or in an oven at 325°F for 3-4 hours until tender.
  • Let cool and refrigerate overnight.

Prepare Pickled Shallots (Day Before):

  • In a saucepan, combine vinegar, sugar, and salt. Bring to a boil.
  • Pour the hot mixture over the thinly sliced shallots.
  • Let cool to room temperature, then refrigerate overnight.

Make Red Eye BBQ Sauce:

  • Mix BBQ sauce and brewed coffee. Set aside.

Make Cold Brew Vinaigrette:

  • Whisk together cold brew coffee, olive oil, balsamic vinegar, honey, Dijon mustard, salt, and Pepper.

Prepare Brown Sugar Bacon:

  • Preheat the oven to 375°F.
  • Lay bacon strips on a baking sheet. Sprinkle brown sugar over the bacon.
  • Bake for 15-20 minutes until crispy and caramelized.

Assemble and Cook Burgers:

  • Shred the braised short ribs. Reheat in a skillet, adding some red-eye BBQ sauce for moisture and flavor.
  • Toast the hamburger buns.
  • Place a layer of arugula dressed lightly on the bottom bun with the cold brew vinaigrette.
  • Add the shredded short rib, a slice of white cheddar cheese, and brown sugar bacon.
  • Top with pickled shallots and drizzle more red-eye BBQ sauce.
  • Cap with the top bun.

Serve:

  • Serve the 24-Hour Burgers immediately with your favorite side dishes like sweet potato fries or a fresh salad.
