Ingredients
  

  • 11 oz Fresh Prawns
  • 2 cloves Garlic, sliced
  • 1 oz Chilli Flakes
  • 4 oz Radish, quartered
  • 4 oz Cherry Tomatoes, halved
  • 1 oz Spring Onions, sliced
  • 2 oz Baby Gem Lettuce, shredded
  • 1 Avocado, sliced
  • 1 Lime, juiced
  • 1/2 oz Coriander, chopped
  • 2 Tortillas
  • Olive Oil, as needed
  • Salt, to taste
  • Pepper, to taste

Instructions
 

Marinate the Prawns:

  • Marinate the prawns in a bowl with the sliced garlic, a pinch of chili flakes, salt, pepper, and olive oil. Mix well and set aside to marinate.

Prepare the Salad:

  • Cut the radishes into quarters and halve the cherry tomatoes.
  • Slice the spring onions and add them to a salad bowl.
  • Season the salad ingredients with salt and pepper.
  • Add sliced chili, avocado, and shredded baby gem lettuce to the bowl.
  • Drizzle the juice of one lime and some olive oil over the salad.
  • Add the chopped coriander and mix everything.

Cook the Prawns:

  • Heat a teaspoon of olive oil in a pan over medium heat.
  • Add the marinated prawns and fry until they are nicely colored and cooked.

Prepare the Tortillas:

  • In a hot pan, dry fry the tortillas until they are warm and slightly crispy.

Assemble the Tostadas:

  • Place the prepared salad onto the tortillas.
  • Top each tortilla with the cooked prawns.

Season the prawns just before cooking, not in advance, to prevent them from becoming tough and rubbery.
