Ingredients
  

  • Burger Ingredients
  • 1 lb Ground Beef (preferably 80/20 mix)
  • 4 slices Swiss Cheese
  • 4 large Portobello Mushrooms Caps
  • 8 strips Bacon
  • 2 medium Tomatoes (for roasting)
  • 1 cup Arugula
  • 4 Eggs
  • 4 Hamburger Buns
  • Salt and Pepper To taste
  • Olive Oil For roasting and grilling

For the Mushroom Marinade

  • 1/4 cup Balsamic Vinegar
  • 1/4 cup Olive Oil
  • 2 cloves Garlic minced
  • 1 tsp. Thyme
  • Salt and Pepper To taste

For the Hot Mayo

  • 1/2 cup Mayonnaise
  • 1 tsp. Hot Sauce (like sriracha, or adjust to taste)

Instructions
 

  • Marinate Portobello Mushrooms:
  • Whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, and Pepper in a bowl.
  • Place the mushroom caps in the marinade and let them sit for at least 30 minutes, turning occasionally.

Prepare Hot Mayo:

  • Mix mayonnaise and hot Sauce. Adjust the amount of hot Sauce to your preference.

Roast Tomatoes:

  • Preheat the oven to 400°F (200°C).
  • Slice the tomatoes and place them on a baking sheet.
  • Drizzle with olive oil and season with salt and Pepper.
  • Roast for 15-20 minutes until they are slightly charred and tender.

Cook Bacon:

  • In a skillet, cook the bacon until crispy. Set aside on paper towels to drain.

Grill Marinated Mushrooms:

  • Grill the marinated mushrooms over medium-high heat until tender and charred, about 4-5 minutes per side.

Prepare Patties:

  • Divide the ground beef into 4 equal portions.
  • Form each into a patty about ¾ inch thick.
  • Season both sides with salt and Pepper.

Cook Burgers:

  • Grill the patties for about 4 minutes per side for medium doneness.
  • When the patties are nearly done, top each with a slice of Swiss cheese to melt.

Fry Eggs:

  • In a separate skillet, fry the eggs to your desired doneness.

Prepare Buns:

  • Lightly toast the hamburger buns on the grill or in a skillet.

Assemble Burgers:

  • Spread hot mayo on the bottom buns.
  • Add a layer of arugula.
  • Place the cheese-topped burger patty.
  • Add a grilled portobello mushroom cap.
  • Top with roasted tomato slices and two strips of bacon.
  • Place a fried egg on top.
  • Cap with the top bun.

Serve:

  • Serve the Celebration Las Vegas Burgers immediately with side dishes like fries or a mixed greens salad.
